Black bean is a kind of nourishing food. Its protein content is as high as 36 % -40%, equivalent to 2 times the protein content in meat, 3 times that in eggs, and 12 times that in milk. Its protein, lysine and methionine content are higher than that in other colored beans. The amino acid composition of black bean protein is one of the plant proteins most similar to animal proteins.
